Potato Peel Nachos
The long awaited recipe for potato peel nachos is finally here! Potato peel nachos are an incredibly tasty way of reducing food waste by using potato peels to make a quick snack instead of tossing them.
Prep Time: 15 min
Ingredients:
- Potato peels (cut about 1/2 cm thick)
- 3 tablespoons of olive oil
- 1 teaspoon of salt
- 4 slices of thick-cut bacon (if desired, highly recommended)
- 1½ cup of shredded cheddar cheese
- ¼ cup of chopped green onions (if desired, highly recommended)
- ¼ cup of sour cream (if desired)
Instructions:
- Preheat the oven to 400˚F.
- Place the potato peels onto a tray and drizzle 3 tablespoons of olive oil and sprinkle 1 teaspoon of salt.
- Place the tray with the oiled and salted potato peels in the oven for 25-30 minutes. Make sure they are golden and crispy.
- While the potato peels are in the oven, dice up the back and place in a pan over medium heat. Let the bacon cook away until crisp and then remove from the pan and let drain on a piece of paper towel.
- Next, shred the cheese. You will need about 1½ cups.
- After the potato peels are nicely browned, remove from the oven and cover with cheese and bacon. Place back in the oven until the cheese is nicely melted (6-8 mins).
- Serve with green onions and sour cream (if desired).
